Axe Hole Brandy

We’re thrilled to introduce our oldest spirit yet. This brandy had its humble beginnings as Grenache grapes, locally pressed and fermented during the 2019 harvest season. But here’s where the magic happens: we split the batch in half. Half cozied up in a French oak white wine barrel, soaking up warm, spicy notes. The rest aged in an American oak Bourbon barrel, infusing rich caramel and velvety vanilla flavor. After 4 years in those oak casks, our brandy earned its stripes—the prestigious VSOP label, which stands for ‘Very Superior Old Pale.’ So go ahead, sip and savor the best of both oaks!

Local brewers and distillers worked together to craft this grain-to-glass whiskey; a limited-edition spirit soaked in tradition and forged through innovation. Single malt whiskey is distilled from one type of malt (it’s almost always malted barley) under the roof of one distillery. It’s a style commonly associated with Scotch and Irish whiskies but there is currently a movement underway to establish single malt whiskey as its own official category here in the United States. This is a collaborative project with our friends at Firestone Walker Brewing Company. They made a mash with the same premium- quality grains they use to brew their award-winning beer, sour-fermented it with native yeasts and bacteria, and then sent it to us to distill and age for over 3 years in charred American oak barrels.

Big Sur Gin - Classic

Big Sur Gin - Old Tom

A collaboration with Firestone Walker Brewing Company
 
Old Tom gin is made using the original British gin distillation method. It’s a style that even pre-dates the London Dry style. Old Tom Gin has a round flavor profile with a slight malt character and soft juniper notes. When we ventured to make this traditional spirit with our friends at Firestone Walker Brewing Company, we began with a mash comprised of malted barley and grapes that we then fermented with native yeasts. In addition to juniper, the spirit is infused with traditional beer spices like coriander and fresh orange peel, as well as the native herbs that give our Big Sur Gin a taste of the central coast.
 
Back in the day, Old Tom gin was oftentimes stored in oak barrels while it waited to be consumed. In pursuit of re-creating an authentic 18th century British gin, we aged this version of Old Tom Gin in Firestone Walker Double Barrel Ale barrels before bottling – lending the spirit notes of toffee, caramel, and baking spice.
