Our classic Big Sur Gin has been aged in our solera barrel system for six years. Each year we only bottle half of the spirit in the barrel. We transfer the remainder to another barrel, top it off with unaged fresh gin, and then continue aging. As this program progresses, the average age will increase. When the gin is barrel aged, the peaks and valleys are rounded out and blended together to create one synchronized symphony of flavor. This year’s batch was rested in a Grenache dessert wine barrel from our next door neighbors, Seven Oxen.
